Building a hosted feature layer in your own ArcGIS Online? Import the GeoJSON layers as items and overwrite on your schedule — field names are stable (see Versioning), so overwrite never breaks your web maps. That's also the path that makes the data visible in ArcGIS Field Maps on mobile.
